Refill jar of sourdough starter with cup of white bread flour plus 1 Tbs spelt wheat flour and warm water, stir till dry flour is dough, set in kitchen sink, lid loose on top, till it overflows, rinse outside of jar, put in fridge.


- Rest dough in covered bread mixer bowl one hour. Flour dust kitchen work surface, put dough on top, roll into 16” roll, cut in equal 4” pieces, roll each piece into 8” smaller roll, put in bread forms. Rise in cold oven overnight, leave ovenlight on if possible for better proofing.



- Bake. For hard crust, put glass measuring cup of hot water underneath bread forms and bake at 425F degrees (left picture). For softer crust, bake without water in oven (right picture). Start oven with loaves inside, bring to 425F degrees in baking mode. When oven reaches 425F, about 15 minutes, turn oven off. Let loaves finish baking inside oven as oven cools. Serve or freeze.
